Raw sugarcane

Raw sugarcane is sugar that keeps some of its molasses instead of being refined white. It is the sweetener in the sachet, and it is deliberately light: the aim is a cup that tastes like coffee with cream, not a dessert. Vanilla does part of the sweetening job, so the sugar can do less.
